Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper or lightly spray with cooking spray.
Wash and dry the apples. Using a sharp knife or mandoline slicer, slice the apples thinly (about 1/8 inch thick) and remove any seeds.
In a small bowl, mix together the granulated sugar, ground cinnamon, and a pinch of salt.
Place the apple slices in a single layer on the prepared baking sheet. Make sure they are not overlapping to ensure they bake evenly.
Sprinkle the cinnamon sugar mixture evenly over the apple slices.
Bake in the preheated oven for about 1.5 to 2 hours, flipping the apple slices halfway through to ensure they crisp evenly.
The apple chips are ready when they are crisp and dry. If not fully crisped, leave them in the oven for an additional 10 to 20 minutes, checking frequently.
Once done, remove from the oven and allow cooling on the baking sheet. The chips will get crisper as they cool.
