Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the maple syrup, melted coconut oil (or butter), cinnamon, sea salt, vanilla extract, and cayenne pepper (if using). Mix until well blended.
Add the pecan halves to the bowl and toss them in the maple syrup mixture until they are evenly coated.
Spread the coated pecans in a single layer on the prepared baking sheet. Make sure they are not overlapping for even roasting.
Roast the pecans in the preheated oven for 10 to 12 minutes, stirring halfway through to ensure they toast evenly. Keep an eye on them to prevent burning, as nuts can brown quickly.
Remove the baking sheet from the oven and allow the pecans to cool completely on the sheet. They will become crunchier as they cool down.
Once cooled, you can break apart any clumps if necessary. Store in an airtight container for up to two weeks.
