Instructions
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
Add the minced garlic and diced bell pepper. Cook for another 2-3 minutes until the vegetables soften.
Increase the heat to medium-high and add the ground chicken. Cook, breaking it up with a spatula, until it’s browned and cooked through (about 5-7 minutes).
Stir in the black beans, corn, taco seasoning, and season with salt and pepper. Cook for another 3-4 minutes, allowing the flavors to meld together.
While the filling cooks, warm the corn tortillas in a separate pan over low heat until soft and pliable (about 1-2 minutes on each side).
To assemble the tacos, spoon a generous amount of the chicken mixture onto each tortilla. Top with sliced avocado and a sprinkle of fresh cilantro.
Serve the tacos with lime wedges on the side to drizzle over before eating.
