In a medium bowl, combine the creamy peanut butter, soy sauce, honey, sriracha, and lime juice. Mix well until smooth and the sauce is fully combined. Adjust the spiciness to your preference by adding more sriracha, if desired.
In a separate bowl, toss the shredded chicken with a pinch of salt and pepper, ensuring it’s well seasoned.
Lay one flour tortilla flat on a clean surface. Spread a generous spoonful of the spicy peanut sauce evenly across the tortilla, leaving a space around the edges.
On one half of the tortilla, layer a portion of the shredded chicken, followed by a handful of shredded carrots, julienned cucumbers, and fresh cilantro.
Starting from the filled side, roll the tortilla tightly but gently, tucking in the sides as you go to enclose the filling. Repeat this process for the remaining tortillas.
Once all wraps are made, slice each wrap in half diagonally for a beautiful presentation.
Serve the wraps with extra spicy peanut sauce on the side for dipping.
