Instructions
In a medium saucepan over low heat, combine the peanut butter and honey (or maple syrup). Stir until melted and well combined. Remove from heat and let cool slightly.
In a large mixing bowl, combine the rolled oats, graham cracker crumbs, salt, and vanilla extract.
Pour the warm peanut butter mixture over the dry ingredients and mix until thoroughly combined. Stir in the chocolate chips, saving a few for the topping.
Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
Transfer the mixture into the lined pan, pressing it down firmly and evenly using a spatula or your hands.
Sprinkle additional chocolate chips on top, pressing them in slightly with the spatula.
Refrigerate for at least 2 hours to set. Once set, lift the bars out of the pan using the parchment paper and cut into squares or rectangles.
Notes
Serve on a beautiful platter or wrap in parchment paper for a rustic touch.
