Instructions
In a large bowl, combine the shredded cooked chicken, Greek yogurt, finely chopped celery, halved red grapes, and chopped walnuts.
In a separate small bowl, whisk together the Dijon mustard, honey, lemon juice, salt, and pepper until well mixed.
Pour the mustard mixture over the chicken mixture and stir until all the ingredients are evenly coated.
Taste and adjust seasoning if necessary. If you prefer a creamier mixture, add a little more Greek yogurt.
To assemble the lettuce wraps, place a generous scoop of the chicken salad in the center of each lettuce leaf.
Fold the sides of the lettuce over the filling and roll it up to form a wrap.
Serve immediately for a fresh crunch, or chill in the refrigerator for 20 minutes before serving if you prefer it cold.
Notes
Arrange the lettuce wraps on a platter and garnish with fresh dill or additional grape halves for a pop of color. Serve with lemon wedges on the side for an extra zesty kick!
