Begin by seasoning the steak cubes with salt and pepper on all sides. Set aside.
In a large skillet, melt 1 tablespoon of butter over medium-high heat.
Add the seasoned steak cubes to the skillet in a single layer, being careful not to overcrowd the pan. Sear for about 2-3 minutes on each side, or until browned and cooked to your desired doneness.
Once the steak bites are cooked, remove them from the skillet and transfer them to a plate.
In the same skillet, lower the heat to medium and add the remaining 2 tablespoons of butter.
Add the minced garlic, chopped rosemary, and thyme to the skillet, stirring constantly for about 1-2 minutes until fragrant and the garlic is golden.
Stir in the Dijon mustard and mix well.
Return the steak bites to the skillet and toss them in the garlic herb butter until evenly coated.
Cook for an additional 1-2 minutes to warm through and infuse the flavors.
Garnish with chopped parsley before serving.
