fresh or frozen cheese tortellini

dried Italian herbs (basil, oregano, thyme)

Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 5 minutes).
Stir in the minced garlic and cook for an additional minute, until fragrant.
Pour in the vegetable broth and bring to a simmer.
Add the cheese tortellini and cook according to the package instructions (usually about 3-5 minutes for fresh, 7-10 for frozen).
Once the tortellini are cooked, stir in the heavy cream and dried Italian herbs, mixing well.
Fold in the chopped spinach, allowing it to wilt in the hot soup for about 2-3 minutes.
Season with salt and pepper to taste.
Serve hot, garnished with grated Parmesan cheese and freshly chopped basil leaves.
Notes
