In a mixing bowl, combine the chia seeds, almond milk, cacao powder, maple syrup, and vanilla extract. Whisk until well combined and there are no lumps from the cacao powder.
Let the mixture sit for about 5 minutes, then whisk again to break up any clumps of chia seeds.
Cover the bowl with plastic wrap or transfer the mixture into individual jars for serving. Place in the refrigerator and allow to chill overnight (or for at least 4 hours) so the chia seeds can absorb the liquid and thicken.
When ready to serve, give the pudding a good stir. If it’s too thick, you can whisk in a little more almond milk to achieve your desired consistency.
Layer the chilled pudding into serving bowls or glasses, alternating with layers of mixed berries and shredded coconut if using.
Finish with a few fresh berries on top and garnish with mint leaves for an extra pop of freshness.
