Instructions
In a large skillet, heat the olive oil over medium-high heat.
Season the diced chicken with smoked paprika, cumin, garlic powder, salt, and pepper.
Add the seasoned chicken to the skillet and cook for about 6-7 minutes, or until golden brown and cooked through.
Remove the chicken from the skillet and set it aside.
In the same skillet, add the diced red bell pepper and red onion. Sauté for about 3-4 minutes, until the vegetables begin to soften.
Add the corn kernels and chipotle in adobo sauce to the skillet, stirring to combine. Let it cook for another 2-3 minutes.
Lower the heat and add the softened cream cheese, stirring continuously until it melts and becomes creamy.
Return the cooked chicken to the skillet and mix everything thoroughly, allowing the flavors to meld for an additional 2 minutes.
Sprinkle the shredded Monterey Jack cheese on top, cover the skillet, and let it sit for a minute until the cheese melts.
Remove from heat and garnish with chopped cilantro. Serve hot with lime wedges on the side.
