Instructions
In a large mixing bowl, combine the rinsed chickpeas, diced cucumber, cherry tomatoes, chopped red onion, and diced bell pepper.
Add the freshly chopped parsley to the bowl for added flavor and freshness.
In a small bowl, whisk together the olive oil, lemon juice, cumin, salt, and pepper until well emulsified to create a dressing.
