Instructions
In a mixing bowl, combine the shredded chicken and buffalo sauce. Mix until the chicken is evenly coated.
Heat a large skillet over medium heat and add olive oil.
Place one tortilla in the skillet and sprinkle half of the cheddar and half of the mozzarella cheese on one half of the tortilla.
On top of the cheese, layer a generous portion of the buffalo chicken mixture and sprinkle with sliced green onions.
Fold the tortilla in half to cover the filling and cook for about 3-4 minutes until the bottom is golden and the cheese begins to melt.
Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden brown and the cheese is fully melted.
Remove from the skillet and let it rest for a minute before slicing into wedges.
Serve hot with ranch dressing on the side for dipping.
