Dip each chicken breast first into the egg mixture, ensuring it's completely coated, then roll it in the breadcrumb mixture until fully covered.
Place the coated chicken breasts on the prepared baking sheet. You can lightly spray them with cooking spray for an extra crispiness.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the coating is golden and crispy.
Remove from the oven and let the chicken rest for 5 minutes.
Garnish with chopped fresh parsley before serving.
